Cuisine In Motion

Did you know that the Caribbean islands were colonized by the British, French, Spanish, Portuguese, Swedish and Dutch? British traditions like baked ham, turkey, plum pudding (fruit-cake or rum cake) became staples in Caribbean homes for Christmas. When sugar was king, the crop was a hugely viable commodity for the British. The ethnic groups formed the largest part of the population influencing the cuisine with the use of root crops such as cassava, eddoes (taro), and dasheen, yams, and plantains from kitchen gardens supplemented by the prolific breadfruit from trees all over the island. Oh the Coo-coo, callaloo, ackee, pepperpot and oil-down!

The Cuisine in Motion series provides a culinary educational videos that are created to educate the greater public of the diverse food that is in the Caribbean. We create events year- round geared to showcasing the various plates that are served throughout the Caribbean cultures. Our major initiative is Eat Caribbean: NY Caribbean Restaurant Week which takes place in June each year.
